Clinical (22 Weeks)
During the clinical rotations the intern will learn and apply all components of medical nutrition therapy, including:
- completing nutrition screening/assessments
- providing nutrition education/counseling
- developing individualized nutrition care plans
- documentation in medical charts, modifying diets
- tube feedings, etc.
Clinical rotations include: cardiac, oncology, diabetes, (in-patient and out-patient education centers), ICU, nutrition support, surgery, pulmonary, NICU, long-term care, rehabilitation and pediatrics.
Rotations will be at various clinics and hospital units. The following are facilities to which the intern may be assigned for clinical rotations during the internship:

- Covenant Health Systems (Sevierville, Morristown, Oak Ridge)
- Fresenius Medical Centers (Tri-cities area)

- Veterans Affairs Medical Center
- Aston Park Health Care Center (Asheville, NC)
- Covenant Health Systems (Sevierville)
- Claxton Dietetic Solutions (Tri-Cities and Knoxville)
- Community Public Health (6 Weeks)
Public Health
During the community public health rotations the intern will educate clients in various settings, including:
- Health Departments
- Regional Children's Special Services
- community groups, and
- public schools.
The intern will also assist with community assessment of nutritional needs, and consultant/private practice training.
Rotations will be at various sites. The intern will be assigned to one county health department in the eight county region. Tennessee Department of Health
Food Service Management (6 Weeks)
During the food service management rotation the intern will:
- develop, prepare, cost, and evaluate special meal function
- monitor sanitation and safety
- conduct in-service training programs, and
- manage food service operations.
The rotation will be at one of the following sites:
- Veterans Affairs Medical Center
- Mountain States Health Alliance
- Covenant Health Systems (Oak Ridge and Sevierville)
- Kingsport City Schools
